Make a double batch, or devote a day to cooking several types of soup so you can have it ready to heat and serve. Heat up soup and send it in a Thermos. It is a great way to take along a hot meal to the hockey game. Choosing a cream soup for makes it easy to drink the soup out of the thermos.

WARNING: Be careful with children not to have the soup too hot. If you have a good Thermos it will stay about the same temperature as it is when you put it in the Thermos.

Cauliflower Curry Soup

Gluten Free – Dairy Free
1 large cauliflower
2 large baking potatoes (peeled or unpeeled—your choice)
2 cups water
1 teaspoon sea salt
1 14 oz (400 ml) can Coconut Milk
3 tablespoons Yellow Madras Curry (or to taste)

  • Wash and chop cauliflower into large chunks.
  • Wash and chop potatoes into chunks half the size of the cauliflower chunks.
  • Place in a large saucepan, add two cups of water and salt.
  • Bring to a boil, and then turn down heat to half (maintain a slow boil)
  • Cook approximately 15 minutes or until potatoes are well cooked.
  • Drain.
  • Add yellow curry powder and coconut milk.
  • Using a emersion blender (or electric mixer) puree the soup.
  • Serve.
  • Freezes well you may want to make a double batch.
